For the Crust:
- 1 sheet frozen puff pastry, thawed
- 3 medium beets, peeled and sliced into 1/4-inch rounds
- 1 tablespoon olive oil
- 4 ounces goat cheese, crumbled
- 1 tablespoon fresh thyme leaves
- 1 tablespoon honey
- Salt and black pepper to taste
- 1/4 cup chopped walnuts
- Fresh arugula for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss beet slices with olive oil, salt, and pepper, then roast on a baking sheet for 20-25 minutes until tender.
- Roll out puff pastry on a parchment-lined baking sheet. Prick all over with a fork and bake for 10 minutes until lightly golden.
- Spread goat cheese evenly over the baked pastry, leaving a 1-inch border. Arrange roasted beets on top.
- Sprinkle with thyme and walnuts. Drizzle with honey and bake for another 10-15 minutes until pastry is crisp.
- Let cool slightly, garnish with arugula, slice, and serve warm.
