Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss beet and sweet potato slices with olive oil, salt, and pepper.
- Arrange slices in a single layer on baking sheets. Roast for 20-25 minutes, until tender and lightly browned.
- While vegetables roast, whip cream cheese until smooth and spreadable.
- Layer roasted beet and sweet potato slices into stacks on serving plates.
- Top each stack with a dollop of whipped cream cheese, a sprinkle of walnuts, a drizzle of honey, and fresh thyme.
