A vibrant and nutritious side dish featuring roasted beets and sweet potatoes, topped with tangy feta and fresh cilantro.

For the Crust:

  • 2 medium beets, peeled and cubed
  • 2 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh cilantro, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the cubed beets and sweet potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
  3. Spread the vegetables in a single layer on the prepared baking sheet. Roast for 25-30 minutes, or until tender and slightly caramelized.
  4. Remove from oven and let cool slightly. Transfer to a serving dish and top with crumbled feta and fresh cilantro before serving.
