For the Crust:

  • 1 lb carrots, peeled and cut into sticks
  • 3 tbsp unsalted butter
  • 2 tbsp honey
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme leaves
  • Salt and black pepper to taste
  • 1 tbsp chopped parsley for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Arrange carrot sticks on a baking sheet in a single layer.
  2. In a small saucepan, melt butter over medium heat. Cook, swirling occasionally, until butter turns golden brown and smells nutty, about 3-4 minutes. Remove from heat.
  3. Stir honey, minced garlic, thyme, salt, and pepper into the brown butter. Drizzle mixture evenly over carrots and toss to coat.
  4. Roast carrots for 20-25 minutes, stirring halfway, until tender and caramelized at the edges.
  5. Transfer to a serving dish, garnish with parsley, and serve warm.
