Description

A vibrant and flavorful side dish featuring roasted Brussels sprouts and butternut squash, topped with sweet maple-glazed walnuts and tart dried cranberries.

For the Crust:

  • 1 lb Brussels sprouts, trimmed and halved
  • 1 small butternut squash, peeled and cubed
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 1/2 cup walnuts
  • 2 tbsp maple syrup
  • 1/4 cup dried cranberries

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss Brussels sprouts and butternut squash with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
  3. Spread vegetables in a single layer on the prepared baking sheet. Roast for 25-30 minutes, or until tender and lightly browned.
  4. While vegetables roast, heat a small skillet over medium heat. Toast walnuts for 2-3 minutes, then add maple syrup and stir until walnuts are coated and glossy. Remove from heat.
  5. Transfer roasted vegetables to a serving dish. Top with maple walnuts and dried cranberries. Toss gently to combine and serve warm.

You can customize the seasonings to taste.
