For the Crust:
- 1 lb carrots, peeled and sliced into 1/2-inch rounds
- 2 tbsp olive oil
- 1 tsp honey
- 1/2 tsp ground cumin
- Salt and black pepper to taste
- 4 cups mixed greens (such as arugula or spinach)
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped pecans, toasted
- Zest of 1 orange
- 2 tbsp fresh orange juice
- 1 tbsp balsamic vinegar
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss carrots with olive oil, honey, cumin, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.
- In a small bowl, whisk together orange juice and balsamic vinegar to make a simple dressing.
- Arrange mixed greens on a serving platter. Top with roasted carrots, crumbled feta, and toasted pecans.
- Drizzle the dressing over the salad and sprinkle with orange zest. Toss gently just before serving.
