For the Crust:
- 4 medium carrots, peeled and sliced into thin strips
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup ricotta cheese
- 2 tablespoons honey, plus extra for drizzling
- 4 slices crusty bread, toasted
- Fresh thyme leaves for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss carrot strips with olive oil, salt, and pepper, then spread on a baking sheet. Roast for 20-25 minutes until tender and lightly caramelized.
- In a small bowl, mix ricotta cheese with 2 tablespoons honey until smooth and well combined.
- Toast bread slices until golden and crisp. Spread a generous layer of honey ricotta on each toast.
- Top the ricotta with roasted carrot strips, drizzle with additional honey, and garnish with fresh thyme leaves. Serve immediately.
