For the Crust:

  • 4 medium carrots, peeled and sliced into thin strips
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup ricotta cheese
  • 2 tablespoons honey, plus extra for drizzling
  • 4 slices crusty bread, toasted
  • Fresh thyme leaves for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss carrot strips with olive oil, salt, and pepper, then spread on a baking sheet. Roast for 20-25 minutes until tender and lightly caramelized.
  2. In a small bowl, mix ricotta cheese with 2 tablespoons honey until smooth and well combined.
  3. Toast bread slices until golden and crisp. Spread a generous layer of honey ricotta on each toast.
  4. Top the ricotta with roasted carrot strips, drizzle with additional honey, and garnish with fresh thyme leaves. Serve immediately.
