A savory-sweet tart featuring roasted carrots on a nutty tahini crust, drizzled with a fragrant orange blossom glaze.

For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup tahini
- 1/4 cup olive oil
- 1/4 cup cold water
- 1 tsp salt
- 1 lb carrots, peeled and sliced
- 2 tbsp honey
- 1 tbsp orange blossom water
- 1/4 cup crumbled feta cheese
- 2 tbsp chopped fresh parsley
- 1 tsp ground cumin
- 1/2 tsp black pepper
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). In a bowl, mix flour, tahini, olive oil, water, and salt until a dough forms. Press into a tart pan and bake for 15 minutes.
- Toss carrots with olive oil, cumin, salt, and pepper. Roast on a baking sheet for 20 minutes until tender.
- Whisk honey and orange blossom water in a small bowl. Drizzle over baked crust.
- Arrange roasted carrots on crust, sprinkle with feta and parsley. Serve warm or at room temperature.
