Sweet roasted carrots served over creamy whipped ricotta and drizzled with spicy hot honey for a perfect balance of flavors.

For the Crust:

  • 1 lb carrots, peeled and halved lengthwise
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 1 cup whole milk ricotta
  • 1/4 cup heavy cream
  • 1 tbsp lemon juice
  • 1/4 cup honey
  • 1 tsp red pepper flakes
  • Fresh thyme for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss carrots with olive oil, smoked paprika, salt, and pepper. Arrange in a single layer on a baking sheet.
  2. Roast carrots for 20-25 minutes, until tender and lightly browned.
  3. While carrots roast, whip ricotta, heavy cream, and lemon juice in a bowl until smooth and creamy.
  4. In a small saucepan, gently warm honey and red pepper flakes over low heat for 3-4 minutes to infuse.
  5. Spread whipped ricotta on a serving plate, top with roasted carrots, drizzle with hot honey, and garnish with fresh thyme.

Notes

You can customize the seasonings to taste.
