Sweet roasted carrots served over creamy whipped ricotta and drizzled with spicy hot honey for a perfect balance of flavors.


Ingredients

For the Crust:

  • 1 lb carrots, peeled and halved lengthwise
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 1 cup whole milk ricotta
  • 1/4 cup heavy cream
  • 1 tbsp lemon juice
  • 1/4 cup honey
  • 1 tsp red pepper flakes
  • Fresh thyme for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss carrots with olive oil, smoked paprika, salt, and pepper. Arrange on a baking sheet and roast for 25-30 minutes, until tender and caramelized.
  2. While carrots roast, combine ricotta, heavy cream, and lemon juice in a food processor. Blend until smooth and creamy. Season with salt to taste.
  3. In a small saucepan, gently warm honey and red pepper flakes over low heat for 2-3 minutes. Remove from heat and let infuse.
  4. To serve, spread whipped ricotta on a plate, top with roasted carrots, drizzle with hot honey, and garnish with fresh thyme.
