For the Crust:
- 1 lb carrots, peeled and halved lengthwise
- 2 tbsp olive oil
- 1 tsp smoked paprika
- Salt and black pepper to taste
- 1 cup whole milk ricotta
- 1/4 cup heavy cream
- 1 tbsp lemon juice
- 1/4 cup honey
- 1 tsp red pepper flakes
- Fresh thyme for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss carrots with olive oil, smoked paprika, salt, and pepper. Arrange on a baking sheet and roast for 25-30 minutes, until tender and caramelized.
- While carrots roast, combine ricotta, heavy cream, and lemon juice in a food processor. Blend until smooth and creamy. Season with salt to taste.
- In a small saucepan, gently warm honey and red pepper flakes over low heat for 2-3 minutes. Remove from heat and let infuse.
- To serve, spread whipped ricotta on a plate, top with roasted carrots, drizzle with hot honey, and garnish with fresh thyme.
