Description

Sweet roasted carrots served over creamy whipped ricotta and drizzled with spicy hot honey for a perfect balance of flavors.

For the Crust:

  • 1 lb carrots, peeled and halved lengthwise
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup whole milk ricotta
  • 1/4 cup heavy cream
  • 1 clove garlic, minced
  • 1/4 cup honey
  • 1 tsp red pepper flakes
  • Fresh thyme for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss carrots with olive oil, salt, and pepper, then spread on a baking sheet.
  2. Roast carrots for 25-30 minutes until tender and caramelized, flipping halfway through.
  3. While carrots roast, whip ricotta, heavy cream, and garlic in a bowl until smooth and fluffy.
  4. In a small saucepan, warm honey and red pepper flakes over low heat for 5 minutes to infuse, then let cool slightly.
  5. Spread whipped ricotta on a serving plate, top with roasted carrots, drizzle with hot honey, and garnish with fresh thyme.
