For the Crust:
- 1 lb carrots, peeled and halved lengthwise
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup whole milk ricotta
- 1/4 cup heavy cream
- 1 clove garlic, minced
- 1/4 cup honey
- 1 tsp red pepper flakes
- Fresh thyme for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss carrots with olive oil, salt, and pepper, then spread on a baking sheet.
- Roast carrots for 25-30 minutes until tender and caramelized, flipping halfway through.
- While carrots roast, whip ricotta, heavy cream, and garlic in a bowl until smooth and fluffy.
- In a small saucepan, warm honey and red pepper flakes over low heat for 5 minutes to infuse, then let cool slightly.
- Spread whipped ricotta on a serving plate, top with roasted carrots, drizzle with hot honey, and garnish with fresh thyme.
