A simple, one-pan meal featuring juicy roasted chicken breasts, crispy baby potatoes, and tender green beans tossed in garlic and herbs.

For the Crust:
- 4 boneless, skin-on chicken breasts
- 1 lb baby potatoes, halved
- 1 lb green beans, trimmed
- 4 cloves garlic, minced
- 3 tbsp olive oil
- 1 tsp dried rosemary
- 1 tsp dried thyme
- Salt and black pepper to taste
- 1 lemon, sliced
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C).
- Toss potatoes with 1 tbsp olive oil, rosemary, thyme, salt, and pepper. Spread on a baking sheet.
- Season chicken breasts with salt and pepper. Place skin-side up on the baking sheet with potatoes.
- Roast for 20 minutes.
- Toss green beans with minced garlic and remaining olive oil. Add to the baking sheet, scatter lemon slices around.
- Roast for another 10-15 minutes until chicken is cooked through and vegetables are tender.
- Serve hot, drizzled with pan juices.
