For the Crust:
- 1 cup fresh cranberries
- 1 tablespoon olive oil
- 1 teaspoon cinnamon
- 1 pre-made flatbread crust
- 4 ounces goat cheese, crumbled
- 2 tablespoons honey
- 1/4 cup chopped walnuts
- Fresh thyme for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss cranberries with olive oil and cinnamon, then spread on a baking sheet and roast for 10 minutes until softened.
- Place flatbread crust on a baking sheet. Spread roasted cranberries evenly over the crust, then sprinkle with crumbled goat cheese and chopped walnuts.
- Bake for 12-15 minutes until the crust is golden and cheese is slightly melted. Drizzle with honey and garnish with fresh thyme before serving.
