For the Crust:

  • 1 cup fresh cranberries
  • 1 tablespoon olive oil
  • 1 teaspoon cinnamon
  • 1 pre-made flatbread crust
  • 4 ounces goat cheese, crumbled
  • 2 tablespoons honey
  • 1/4 cup chopped walnuts
  • Fresh thyme for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss cranberries with olive oil and cinnamon, then spread on a baking sheet and roast for 10 minutes until softened.
  2. Place flatbread crust on a baking sheet. Spread roasted cranberries evenly over the crust, then sprinkle with crumbled goat cheese and chopped walnuts.
  3. Bake for 12-15 minutes until the crust is golden and cheese is slightly melted. Drizzle with honey and garnish with fresh thyme before serving.

Notes

You can customize the seasonings to taste.
