For the Crust:
- 1 cup fresh cranberries
- 2 tablespoons olive oil, divided
- 1 tablespoon honey
- 1 pre-made flatbread or naan bread
- 4 oz goat cheese, crumbled
- 1/4 cup red onion, thinly sliced
- 1 tablespoon fresh rosemary, chopped
- Salt and black pepper to taste
- Optional: arugula for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss cranberries with 1 tablespoon olive oil and honey on a baking sheet, then roast for 10-12 minutes until softened and slightly burst.
- Brush flatbread with remaining olive oil and place on a separate baking sheet. Bake for 5 minutes until lightly crisp.
- Spread roasted cranberries evenly over the flatbread, then top with crumbled goat cheese, red onion, and rosemary.
- Return flatbread to oven and bake for 8-10 minutes until cheese is slightly melted and edges are golden.
- Remove from oven, season with salt and pepper, garnish with arugula if desired, slice, and serve warm.
