A festive and savory flatbread topped with sweet roasted cranberries, creamy goat cheese, and fresh herbs, perfect for holiday gatherings or a quick appetizer.

For the Crust:

  • 1 cup fresh cranberries
  • 2 tablespoons olive oil, divided
  • 1 tablespoon honey
  • 1 pre-made flatbread or naan bread
  • 4 oz goat cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1 tablespoon fresh rosemary, chopped
  • Salt and black pepper to taste
  • Optional: arugula for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss cranberries with 1 tablespoon olive oil and honey on a baking sheet, then roast for 10-12 minutes until softened and slightly burst.
  2. Brush flatbread with remaining olive oil and place on a separate baking sheet. Bake for 5 minutes until lightly crisp.
  3. Spread roasted cranberries evenly over the flatbread, then top with crumbled goat cheese, red onion, and rosemary.
  4. Return flatbread to oven and bake for 8-10 minutes until cheese is slightly melted and edges are golden.
  5. Remove from oven, season with salt and pepper, garnish with arugula if desired, slice, and serve warm.
