For the Crust:
- 3 medium golden beets, peeled and sliced into 1/4-inch rounds
- 1 ball burrata cheese
- 1/4 cup shelled pistachios, roughly chopped
- 1 orange, segmented
- 1 lemon, juiced
- 2 tablespoons extra virgin olive oil
- 1 teaspoon honey
- 1/4 cup micro basil
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss beet slices with 1 tablespoon olive oil, salt, and pepper. Arrange on a baking sheet and roast for 25-30 minutes, until tender. Let cool.
- In a small bowl, whisk together lemon juice, remaining olive oil, honey, salt, and pepper to make the dressing.
- On serving plates, layer roasted beet slices, burrata pieces, and orange segments into stacks. Drizzle with dressing.
- Garnish with chopped pistachios and micro basil. Serve immediately.
