Description

A vibrant, elegant vegetarian dish featuring layers of sweet roasted golden beets, creamy burrata, crunchy pistachios, zesty citrus, and fresh micro basil.

For the Crust:

  • 3 medium golden beets, peeled and sliced into 1/4-inch rounds
  • 1 ball burrata cheese
  • 1/4 cup shelled pistachios, roughly chopped
  • 1 orange, segmented
  • 1 lemon, juiced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon honey
  • 1/4 cup micro basil
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss beet slices with 1 tablespoon olive oil, salt, and pepper. Arrange on a baking sheet and roast for 25-30 minutes, until tender. Let cool.
  2. In a small bowl, whisk together lemon juice, remaining olive oil, honey, salt, and pepper to make the dressing.
  3. On serving plates, layer roasted beet slices, burrata pieces, and orange segments into stacks. Drizzle with dressing.
  4. Garnish with chopped pistachios and micro basil. Serve immediately.

Notes

You can customize the seasonings to taste.
