For the Crust:
- 1 lb red seedless grapes
- 1 tbsp olive oil
- 1 tsp fresh thyme leaves
- 1 baguette, sliced into 1/2-inch rounds
- 8 oz burrata cheese
- 2 tbsp honey
- Salt and black pepper to taste
- Extra thyme for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F. Toss grapes with olive oil, thyme, salt, and pepper on a baking sheet. Roast for 20-25 minutes until grapes are soft and slightly caramelized.
- Brush baguette slices with olive oil and toast in the oven or on a grill pan until golden and crisp, about 5-7 minutes.
- Spread a spoonful of burrata on each crostini. Top with roasted grapes, drizzle with honey, and garnish with additional thyme. Serve immediately.
