For the Crust:
- 1 lb mixed mushrooms (such as cremini, shiitake, and oyster), cleaned and sliced
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp fresh thyme leaves
- 1 cup plain Greek yogurt
- 1 tbsp lemon juice
- 2 tbsp pomegranate molasses or pomegranate oil
- Salt and black pepper to taste
- Fresh parsley, chopped for garnish
Instructions
1. Prepare the Crust:
- Preheat the oven to 400°F (200°C). In a large bowl, toss the mushrooms with olive oil, minced garlic, thyme, salt, and pepper.
- Spread the mushrooms in a single layer on a baking sheet. Roast for 20-25 minutes, stirring halfway, until golden and tender.
- While mushrooms roast, mix Greek yogurt with lemon juice, a pinch of salt, and half of the minced garlic. Spread the yogurt on a serving plate.
- Arrange the roasted mushrooms over the yogurt. Drizzle with pomegranate molasses or oil and garnish with fresh parsley. Serve warm.
