A savory and elegant dish featuring a mix of roasted mushrooms served over creamy garlic yogurt and drizzled with tangy pomegranate oil.

For the Crust:

  • 1 lb mixed mushrooms (such as cremini, shiitake, and oyster), cleaned and sliced
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp fresh thyme leaves
  • 1 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 2 tbsp pomegranate molasses or pomegranate oil
  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400°F (200°C). In a large bowl, toss the mushrooms with olive oil, minced garlic, thyme, salt, and pepper.
  2. Spread the mushrooms in a single layer on a baking sheet. Roast for 20-25 minutes, stirring halfway, until golden and tender.
  3. While mushrooms roast, mix Greek yogurt with lemon juice, a pinch of salt, and half of the minced garlic. Spread the yogurt on a serving plate.
  4. Arrange the roasted mushrooms over the yogurt. Drizzle with pomegranate molasses or oil and garnish with fresh parsley. Serve warm.
