For the Crust:
- 3 ripe peaches, halved and pitted
- 1/2 cup pistachios, shelled
- 1 cup ricotta cheese
- 2 tablespoons honey
- 4 cups mixed greens
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Place peach halves on a baking sheet, drizzle with olive oil, and roast for 15 minutes.
- In a small bowl, mix ricotta cheese with honey until smooth.
- Arrange mixed greens on a platter. Top with roasted peaches, pistachios, and dollops of honey ricotta. Season with salt and pepper before serving.
