For the Crust:

  • 1 sheet store-bought puff pastry, thawed
  • 2 ripe but firm pears, cored and thinly sliced
  • 1/2 cup crumbled blue cheese
  • 1/4 cup honey
  • 1 teaspoon freshly cracked black pepper
  • 1 tablespoon olive oil
  • 1 egg, beaten (for egg wash)
  • Fresh thyme sprigs for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roll out puff pastry on the prepared sheet. Arrange pear slices in overlapping circles, leaving a 2-inch border. Crumble blue cheese over pears.
  3. Fold pastry edges over filling, pleating as needed. Brush edges with egg wash.
  4. Bake for 25-30 minutes until golden brown. Let cool slightly.
  5. Meanwhile, warm honey in a small saucepan over low heat. Stir in black pepper and remove from heat.
  6. Drizzle black pepper honey over galette. Garnish with thyme and serve warm.
