For the Crust:
- 1 sheet store-bought puff pastry, thawed
- 2 ripe but firm pears, cored and thinly sliced
- 1/2 cup crumbled blue cheese
- 1/4 cup honey
- 1 teaspoon freshly cracked black pepper
- 1 tablespoon olive oil
- 1 egg, beaten (for egg wash)
- Fresh thyme sprigs for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out puff pastry on the prepared sheet. Arrange pear slices in overlapping circles, leaving a 2-inch border. Crumble blue cheese over pears.
- Fold pastry edges over filling, pleating as needed. Brush edges with egg wash.
- Bake for 25-30 minutes until golden brown. Let cool slightly.
- Meanwhile, warm honey in a small saucepan over low heat. Stir in black pepper and remove from heat.
- Drizzle black pepper honey over galette. Garnish with thyme and serve warm.
