For the Crust:
- 2 ripe but firm pears, halved and cored
- 4 oz brie cheese, sliced
- 1/4 cup shelled pistachios, chopped
- 1/4 cup honey
- 1 sprig fresh rosemary
- 1 tbsp olive oil
- Pinch of sea salt
- Freshly ground black pepper
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Arrange pear halves cut-side up on a baking sheet, drizzle with olive oil, and season with salt and pepper.
- Roast pears for 15-20 minutes until tender and slightly caramelized. Remove from oven and top each half with brie slices.
- Return to oven for 5-7 minutes until brie is melted. Meanwhile, warm honey and rosemary in a small saucepan over low heat for 5 minutes, then discard rosemary.
- Sprinkle roasted pear halves with chopped pistachios and drizzle with rosemary honey. Serve warm.
