For the Crust:
- 1 large flatbread or pre-made pizza crust
- 1 ripe pear, thinly sliced
- 1/2 cup fresh or dried cranberries
- 4 oz brie cheese, rind removed and sliced
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tsp fresh thyme leaves
- Salt and black pepper to taste
- 1/4 cup chopped walnuts (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Place flatbread on a baking sheet.
- Brush the flatbread with olive oil and season lightly with salt and pepper.
- Arrange pear slices and cranberries evenly over the flatbread.
- Top with slices of brie cheese and sprinkle with thyme.
- Bake for 12-15 minutes, until the crust is golden and cheese is melted.
- Drizzle with honey, sprinkle with walnuts if using, and slice to serve.
