A vibrant and elegant salad featuring sweet roasted pears, tart cranberries, crunchy pistachios, and creamy whipped ricotta.


Ingredients

For the Crust:

  • 2 ripe pears, cored and sliced
  • 1/2 cup fresh cranberries
  • 1 tbsp olive oil
  • 1 tbsp honey
  • 1 cup ricotta cheese
  • 1/4 cup heavy cream
  • 1 tsp vanilla extract
  • 4 cups mixed greens
  • 1/4 cup shelled pistachios
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F. Toss pear slices and cranberries with olive oil, honey, salt, and pepper. Roast for 15-20 minutes until tender.
  2. In a bowl, whip ricotta, heavy cream, and vanilla until smooth and fluffy. Season lightly with salt.
  3. Arrange mixed greens on plates. Top with roasted pears and cranberries, dollops of whipped ricotta, and a sprinkle of pistachios.
  4. Drizzle with additional honey if desired and serve immediately.

Notes

You can customize the seasonings to taste.
