For the Crust:
- 4 ripe but firm pears, halved and cored
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1/2 cup crumbled blue cheese
- 1/4 cup shelled pistachios, chopped
- 1 teaspoon fresh thyme leaves
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Arrange pear halves cut-side up on a baking sheet.
- Drizzle pears with olive oil and honey, then season with salt and pepper.
- Roast for 20-25 minutes until pears are tender and lightly caramelized.
- Remove from oven and top each pear with blue cheese and pistachios.
- Return to oven for 3-5 minutes until cheese is slightly melted.
- Garnish with fresh thyme and serve warm.
