Description

A simple yet elegant dessert or appetizer featuring sweet roasted pears topped with tangy blue cheese, crunchy pistachios, and a drizzle of honey.

For the Crust:

  • 2 ripe but firm pears, halved and cored
  • 1 tablespoon olive oil
  • 2 tablespoons honey, plus extra for drizzling
  • 1/4 cup crumbled blue cheese
  • 1/4 cup shelled pistachios, roughly chopped
  • Fresh thyme leaves for garnish (optional)
  • Pinch of salt and black pepper

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place the pear halves cut-side up on the baking sheet. Drizzle with olive oil and 1 tablespoon of honey. Season lightly with salt and pepper.
  3. Roast in the oven for 20-25 minutes, until the pears are tender and slightly caramelized.
  4. Remove from the oven and let cool slightly. Top each pear half with blue cheese and chopped pistachios.
  5. Drizzle with the remaining honey and garnish with thyme if using. Serve warm.

You can customize the seasonings to taste.
