A simple yet elegant dessert or appetizer featuring sweet roasted pears topped with tangy blue cheese, crunchy pistachios, and a drizzle of honey.

For the Crust:
- 2 ripe but firm pears, halved and cored
- 1 tablespoon olive oil
- 2 tablespoons honey, plus extra for drizzling
- 1/4 cup crumbled blue cheese
- 1/4 cup shelled pistachios, roughly chopped
- Fresh thyme leaves for garnish (optional)
- Pinch of salt and black pepper
Instructions
1. Prepare the Crust:
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place the pear halves cut-side up on the baking sheet. Drizzle with olive oil and 1 tablespoon of honey. Season lightly with salt and pepper.
- Roast in the oven for 20-25 minutes, until the pears are tender and slightly caramelized.
- Remove from the oven and let cool slightly. Top each pear half with blue cheese and chopped pistachios.
- Drizzle with the remaining honey and garnish with thyme if using. Serve warm.
