For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup roasted red peppers, drained and chopped
- 2 cups fresh spinach, chopped
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1/4 cup grated Parmesan cheese
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Slice a pocket into each chicken breast, being careful not to cut all the way through.
- In a bowl, combine roasted red peppers, spinach, mozzarella, garlic, oregano, salt, and pepper.
- Stuff each chicken breast with the mixture and secure with toothpicks if needed.
- Place chicken in the baking dish, drizzle with olive oil, and sprinkle with Parmesan cheese.
- Bake for 25-30 minutes, or until chicken is cooked through and juices run clear.
- Let rest for 5 minutes before serving.
