Description

Tender chicken breasts stuffed with a savory mix of roasted red peppers, fresh spinach, and creamy mozzarella, then baked to perfection.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers, drained and chopped
  • 2 cups fresh spinach, chopped
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Slice a pocket into each chicken breast, being careful not to cut all the way through.
  3. In a bowl, combine roasted red peppers, spinach, mozzarella, garlic, oregano, salt, and pepper.
  4. Stuff each chicken breast with the mixture and secure with toothpicks if needed.
  5. Place chicken in the baking dish, drizzle with olive oil, and sprinkle with Parmesan cheese.
  6. Bake for 25-30 minutes, or until chicken is cooked through and juices run clear.
  7. Let rest for 5 minutes before serving.
