Description

Tender chicken breasts stuffed with roasted red peppers, fresh spinach, and melty mozzarella, then baked to perfection.


Ingredients

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers, sliced
  • 2 cups fresh spinach
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. Slice a pocket into each chicken breast, being careful not to cut all the way through.
  3. In a bowl, mix roasted red peppers, spinach, mozzarella, garlic, and Italian seasoning.
  4. Stuff each chicken breast with the mixture and secure with toothpicks.
  5. Season the outside with salt and pepper, then brush with olive oil.
  6. Bake for 25-30 minutes or until chicken is cooked through and juices run clear.

Notes

You can customize the seasonings to taste.
