For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup roasted red peppers, sliced
- 2 cups fresh spinach
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- Slice a pocket into each chicken breast, being careful not to cut all the way through.
- In a bowl, mix roasted red peppers, spinach, mozzarella, garlic, and Italian seasoning.
- Stuff each chicken breast with the mixture and secure with toothpicks.
- Season the outside with salt and pepper, then brush with olive oil.
- Bake for 25-30 minutes or until chicken is cooked through and juices run clear.
