For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup roasted red peppers, drained and chopped
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- Slice a pocket into each chicken breast, being careful not to cut all the way through.
- In a bowl, mix together spinach, roasted red peppers, mozzarella, garlic, oregano, salt, and pepper.
- Stuff each chicken breast with the spinach and pepper mixture, then secure with toothpicks.
- Brush chicken with olive oil and place in a baking dish.
- Bake for 25-30 minutes, or until chicken is cooked through and no longer pink.
