Description

Tender chicken breasts stuffed with a savory blend of roasted red peppers, fresh spinach, and gooey mozzarella cheese, then baked to perfection.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers, drained and chopped
  • 2 cups fresh spinach, chopped
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Using a sharp knife, slice a pocket into the side of each chicken breast, being careful not to cut all the way through.
  3. In a bowl, combine roasted red peppers, spinach, mozzarella, garlic, oregano, salt, and pepper. Mix well.
  4. Stuff each chicken breast with the pepper and spinach mixture, then secure with toothpicks if needed.
  5. Brush chicken with olive oil, sprinkle with Parmesan cheese, and place in the prepared baking dish.
  6. Bake for 25-30 minutes, or until chicken is cooked through and juices run clear. Let rest 5 minutes before serving.
