Description

A rustic, free-form tart featuring sweet roasted strawberries, creamy goat cheese, and a drizzle of black pepper-infused honey for a savory-sweet finish.

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 45 tablespoons ice water
  • 2 cups fresh strawberries, hulled and halved
  • 1 tablespoon granulated sugar
  • 4 ounces goat cheese, softened
  • 1 egg, beaten (for egg wash)
  • 1/4 cup honey
  • 1/2 teaspoon freshly ground black pepper

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). In a bowl, mix flour and salt. Cut in butter until pea-sized crumbs form. Gradually add ice water until dough comes together. Shape into a disk, wrap in plastic, and chill for 30 minutes.
  2. Toss strawberries with sugar and spread on a baking sheet. Roast for 15 minutes until softened. Let cool slightly.
  3. Roll out dough on a floured surface into a 12-inch circle. Spread goat cheese in the center, leaving a 2-inch border. Top with roasted strawberries.
  4. Fold dough edges over filling, pleating as you go. Brush crust with egg wash. Bake for 25-30 minutes until golden.
  5. While baking, warm honey in a small saucepan with black pepper over low heat for 5 minutes. Drizzle over galette before serving.

You can customize the seasonings to taste.
