For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 4–5 tablespoons ice water
- 2 cups fresh strawberries, hulled and halved
- 1 tablespoon granulated sugar
- 4 ounces goat cheese, softened
- 1 egg, beaten (for egg wash)
- 1/4 cup honey
- 1/2 teaspoon freshly ground black pepper
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). In a bowl, mix flour and salt. Cut in butter until pea-sized crumbs form. Gradually add ice water until dough comes together. Shape into a disk, wrap in plastic, and chill for 30 minutes.
- Toss strawberries with sugar and spread on a baking sheet. Roast for 15 minutes until softened. Let cool slightly.
- Roll out dough on a floured surface into a 12-inch circle. Spread goat cheese in the center, leaving a 2-inch border. Top with roasted strawberries.
- Fold dough edges over filling, pleating as you go. Brush crust with egg wash. Bake for 25-30 minutes until golden.
- While baking, warm honey in a small saucepan with black pepper over low heat for 5 minutes. Drizzle over galette before serving.
