A sweet and tangy breakfast or brunch toast featuring roasted strawberries, fluffy whipped cream cheese, and a drizzle of balsamic glaze on toasted artisan bread.

For the Crust:

  • 1 lb fresh strawberries, hulled and halved
  • 2 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup heavy cream
  • 2 tbsp powdered sugar
  • 4 slices thick artisan bread (e.g., sourdough or brioche)
  • 2 tbsp olive oil
  • 1/4 cup balsamic glaze
  • Fresh mint leaves for garnish (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss strawberries with granulated sugar and vanilla extract on a baking sheet. Roast for 15-20 minutes until soft and juicy. Let cool slightly.
  2. In a mixing bowl, whip cream cheese, heavy cream, and powdered sugar with an electric mixer until light and fluffy, about 2-3 minutes. Set aside.
  3. Brush bread slices with olive oil and toast in a skillet or toaster until golden and crisp.
  4. Spread a generous layer of whipped cream cheese on each toast. Top with roasted strawberries.
  5. Drizzle with balsamic glaze and garnish with mint leaves if desired. Serve immediately.

Notes

You can customize the seasonings to taste.
