Description

A sweet and creamy toast topped with roasted strawberries and whipped ricotta for a delightful breakfast or snack.

For the Crust:

  • 1 cup fresh strawberries, hulled and halved
  • 1 tbsp honey
  • 1 tsp balsamic vinegar
  • 1 cup ricotta cheese
  • 1 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 4 slices sourdough bread, toasted
  • Fresh mint leaves for garnish (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Toss strawberries with honey and balsamic vinegar, then spread on a baking sheet. Roast for 15-20 minutes until softened.
  2. While strawberries roast, blend ricotta, powdered sugar, and vanilla extract in a food processor until smooth and fluffy.
  3. Toast the sourdough bread until golden and crisp. Spread a generous layer of whipped ricotta on each slice.
  4. Top with roasted strawberries and drizzle with any remaining juices from the baking sheet. Garnish with fresh mint if desired.
