For the Crust:

  • 2 large sweet potatoes, peeled and cubed
  • 2 apples, cored and sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cinnamon
  • Salt and black pepper to taste
  • Fresh thyme for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss sweet potatoes, apples, and red onion with olive oil, smoked paprika, cinnamon, salt, and pepper.
  3. Spread the mixture evenly on a baking sheet and roast for 25-30 minutes, or until sweet potatoes are tender and slightly caramelized.
  4. Garnish with fresh thyme before serving.
