A vibrant and satisfying vegetarian taco featuring roasted sweet potatoes, seasoned black beans, and fresh toppings.

For the Crust:

  • 2 medium sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 can (15 oz) black beans, rinsed and drained
  • 8 small corn or flour tortillas
  • 1 avocado, sliced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diced red onion
  • Lime wedges for serving

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, chili powder, cumin, smoked paprika, salt, and pepper.
  2. Spread sweet potatoes on a baking sheet and roast for 20-25 minutes, until tender and slightly browned.
  3. Warm black beans in a small saucepan over medium heat, seasoning with salt and pepper if desired.
  4. Heat tortillas according to package directions until warm and pliable.
  5. Assemble tacos by filling each tortilla with roasted sweet potatoes, black beans, avocado slices, red onion, and cilantro. Serve with lime wedges.
