A vibrant and satisfying salad featuring sweet roasted sweet potatoes, creamy feta, and a sweet-tangy maple drizzle.

For the Crust:

  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 4 cups mixed salad greens
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped walnuts
  • 2 tablespoons maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, until tender and slightly caramelized.
  2. In a small bowl, whisk together maple syrup, apple cider vinegar, and Dijon mustard to create the drizzle.
  3. Arrange mixed greens on a serving platter. Top with roasted sweet potatoes, crumbled feta, and chopped walnuts.
  4. Drizzle the maple dressing over the salad just before serving. Toss gently if desired.
