Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, salt, black pepper, and smoked paprika until evenly coated.
- Arrange rounds in a single layer on the prepared baking sheet. Roast for 25-30 minutes, flipping halfway through, until tender and slightly caramelized.
- Remove from oven and drizzle with honey. Sprinkle with feta cheese and fresh thyme leaves before serving.
