For the Crust:
- 2 large sweet potatoes, peeled and cubed
- 1/2 cup shelled pistachios, roughly chopped
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika

- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
- 1 clove garlic, minced
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C).
- Toss sweet potato cubes with olive oil, smoked paprika, cumin, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, until tender and slightly caramelized.
- In a small bowl, mix lemon juice, minced garlic, and chopped parsley to create a dressing.
- Once sweet potatoes are done, let cool slightly, then toss with pistachios and the dressing. Serve warm.
