A vibrant appetizer featuring crispy roasted sweet potato rounds topped with creamy whipped feta, drizzled with spicy honey, and finished with crunchy pistachios.

For the Crust:

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 1 cup crumbled feta cheese
  • 1/4 cup Greek yogurt
  • 1 tbsp lemon juice
  • 1/4 cup honey
  • 1 tsp red pepper flakes
  • 1/4 cup shelled pistachios, roughly chopped
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss sweet potato rounds with olive oil, smoked paprika, garlic powder, salt, and pepper. Arrange in a single layer on a baking sheet and roast for 25-30 minutes until tender and golden.
  2. While potatoes roast, blend feta, Greek yogurt, and lemon juice in a food processor until smooth and creamy. Set aside.
  3. In a small saucepan, warm honey and red pepper flakes over low heat for 2-3 minutes until fragrant. Remove from heat.
  4. To assemble, spread whipped feta onto each sweet potato round. Drizzle with hot honey, sprinkle with pistachios, and garnish with parsley. Serve warm.
