A festive and flavorful dish featuring roasted sweet potatoes stuffed with a sweet-tart apple-cranberry filling, perfect for holiday meals or cozy dinners.

For the Crust:

  • 4 medium sweet potatoes
  • 1 large apple, peeled and diced
  • 1/2 cup dried cranberries
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup chopped pecans
  • 2 tablespoons butter, melted

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Scrub sweet potatoes and pierce with a fork. Place on a baking sheet and roast for 45-50 minutes, or until tender.
  2. In a medium bowl, combine diced apple, dried cranberries, maple syrup, cinnamon, nutmeg, and salt. Mix well.
  3. Once sweet potatoes are cooked, slice each one open lengthwise. Scoop out some of the flesh and mix it into the apple-cranberry mixture.
  4. Spoon the filling back into the sweet potatoes. Drizzle with melted butter and sprinkle with chopped pecans.
  5. Return to the oven for 5-7 minutes, until pecans are toasted and filling is heated through. Serve warm.
