For the Crust:
- 4 medium sweet potatoes
- 1 large apple, peeled and diced
- 1/2 cup dried cranberries
- 2 tablespoons maple syrup
- 1 tablespoon olive oil
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/4 cup chopped pecans
- 2 tablespoons butter, melted
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Scrub sweet potatoes and pierce with a fork. Place on a baking sheet and roast for 45-50 minutes, or until tender.
- In a medium bowl, combine diced apple, dried cranberries, maple syrup, cinnamon, nutmeg, and salt. Mix well.
- Once sweet potatoes are cooked, slice each one open lengthwise. Scoop out some of the flesh and mix it into the apple-cranberry mixture.
- Spoon the filling back into the sweet potatoes. Drizzle with melted butter and sprinkle with chopped pecans.
- Return to the oven for 5-7 minutes, until pecans are toasted and filling is heated through. Serve warm.
