For the Crust:
- 2 large sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 4 oz feta cheese, crumbled
- 1/4 cup Greek yogurt
- 1 tablespoon lemon juice
- 1/4 cup pomegranate seeds
- 2 tablespoons fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender and golden.
- While potatoes roast, combine feta, Greek yogurt, and lemon juice in a food processor. Blend until smooth and creamy, about 1-2 minutes. Set aside.
- Arrange roasted sweet potatoes on a serving platter. Dollop with whipped feta, then sprinkle with pomegranate seeds and parsley. Serve warm.
