For the Crust:
- 1 large flatbread or naan
- 1 cup cherry tomatoes, halved
- 4 oz goat cheese, crumbled
- 1/4 cup pesto
- 2 cups fresh arugula
- 2 tbsp olive oil
- 1 tsp balsamic glaze
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss cherry tomatoes with 1 tbsp olive oil, salt, and pepper, then roast for 15 minutes until softened.
- Brush flatbread with remaining olive oil and spread pesto evenly over the surface. Top with roasted tomatoes and crumbled goat cheese.
- Bake for 10-12 minutes until the edges are crisp and cheese is slightly melted. Remove from oven, top with fresh arugula, and drizzle with balsamic glaze before serving.
