For the Crust:
- 1 lb mixed vegetables (zucchini, bell peppers, cherry tomatoes, red onion)
- 2 tbsp olive oil
- 1 tsp dried oregano
- Salt and black pepper to taste
- 8 oz burrata cheese
- 2 tbsp balsamic glaze
- Fresh basil leaves for garnish
- 1 loaf crusty bread, sliced and toasted
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss vegetables with olive oil, oregano, salt, and pepper on a baking sheet.
- Roast for 20-25 minutes until tender and slightly charred, stirring halfway through.
- Arrange roasted vegetables on a platter. Place burrata in the center and gently tear open.
- Drizzle with balsamic glaze, garnish with fresh basil, and serve with toasted bread slices.
