For the Crust:
- 2 medium zucchinis, sliced
- 1 can chickpeas, drained and rinsed
- 1/4 cup tahini
- 2 cloves garlic, minced
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Arrange zucchini slices on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20 minutes.
- In a food processor, combine roasted zucchini, chickpeas, tahini, garlic, lemon juice, and olive oil. Blend until smooth.
- Adjust seasoning with additional salt and pepper as needed. Serve chilled or at room temperature.
