Description

This creamy hummus combines roasted zucchini with traditional ingredients for a delicious, unique twist on a classic dip.


Ingredients

For the Crust:

  • 2 medium zucchinis, sliced
  • 1 can chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Arrange zucchini slices on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 20 minutes.
  2. In a food processor, combine roasted zucchini, chickpeas, tahini, garlic, lemon juice, and olive oil. Blend until smooth.
  3. Adjust seasoning with additional salt and pepper as needed. Serve chilled or at room temperature.

Notes

You can customize the seasonings to taste.
