For the Crust:
- 2 medium zucchinis, sliced
- 1 tablespoon olive oil
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tablespoons tahini
Instructions
1. Prepare the Crust:
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss the sliced zucchinis with olive oil and roast for 20 minutes or until golden brown.
- Blend the roasted zucchini, chickpeas, tahini, garlic, lemon juice, cumin, salt, and pepper until smooth.
