For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Toothpicks for securing
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- Pound chicken breasts to an even thickness, then season both sides with salt, pepper, and oregano.
- In a bowl, mix spinach, feta, sun-dried tomatoes, and garlic. Spoon mixture onto each chicken breast.
- Roll up each chicken breast tightly and secure with toothpicks.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken rolls on all sides until golden.
- Transfer skillet to oven and bake for 20-25 minutes, or until chicken is cooked through.
- Let rest for 5 minutes before slicing and serving.
