Description

Tender chicken breasts stuffed with a savory mixture of creamy feta, fresh spinach, and tangy sun-dried tomatoes, then baked to perfection.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Toothpicks for securing

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. Pound chicken breasts to an even thickness, then season both sides with salt, pepper, and oregano.
  3. In a bowl, mix spinach, feta, sun-dried tomatoes, and garlic. Spoon mixture onto each chicken breast.
  4. Roll up each chicken breast tightly and secure with toothpicks.
  5. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken rolls on all sides until golden.
  6. Transfer skillet to oven and bake for 20-25 minutes, or until chicken is cooked through.
  7. Let rest for 5 minutes before slicing and serving.
