For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup crumbled feta cheese
- 2 cups fresh spinach, chopped
- 1/2 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- Toothpicks for securing
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- Place each chicken breast between plastic wrap and pound to an even 1/4-inch thickness.
- In a bowl, combine feta, spinach, sun-dried tomatoes, garlic, oregano, salt, and pepper.
- Spread the mixture evenly over each chicken breast, then roll tightly and secure with toothpicks.
- Brush the outside of each roll with olive oil and season with additional salt and pepper if desired.
- Place in a baking dish and bake for 25-30 minutes, or until chicken is cooked through and juices run clear.
- Let rest for 5 minutes before slicing and serving.
