For the Crust:
- 2 cups fresh raspberries
- 1/4 cup granulated sugar
- 1 tbsp cornstarch
- 1 tsp lemon juice
- 1 package (14 oz) refrigerated pie crust
- 1 egg (for egg wash)
- 2 tbsp honey
- 1 tbsp powdered sugar (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a bowl, mix raspberries, sugar, cornstarch, and lemon juice. Let sit for 10 minutes.
- Roll out pie crust and cut into 4-inch circles. Spoon raspberry filling onto one half of each circle, leaving a border.
- Fold dough over filling, crimp edges with a fork, and brush with egg wash. Bake for 20-25 minutes until golden.
- Warm honey slightly and brush over warm pies. Dust with powdered sugar if desired.
