For the Crust:

  • 2 medium sweet potatoes, peeled and thinly sliced
  • 3 parsnips, peeled and thinly sliced
  • 2 medium beets, peeled and thinly sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter, for greasing

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a baking dish with butter.
  2. In a bowl, combine heavy cream, minced garlic, thyme, salt, and pepper.
  3. Layer the sliced sweet potatoes, parsnips, and beets alternately in the prepared baking dish.
  4. Pour the cream mixture evenly over the vegetables and sprinkle with Parmesan cheese.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until golden and bubbly.
  6. Let rest for 5 minutes before serving.

Notes

You can customize the seasonings to taste.
