For the Crust:
- 2 lbs beef chuck, cut into chunks
- 4 large potatoes, cut into fries
- 4 pieces garlic naan
- 2 large sweet onions, thinly sliced
- 3 tbsp curry powder
- 1 can coconut milk
- 4 cloves garlic, minced
- 2 tbsp ginger, grated
- 2 tbsp vegetable oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
1. Prepare the Crust:
- Season beef with salt, pepper, and 1 tbsp curry powder. In a large pot, heat oil and brown beef on all sides.
- Add onions, garlic, and ginger to the pot. Cook until onions are soft. Stir in remaining curry powder and coconut milk. Simmer covered on low heat for 2 hours until beef is tender.
- While curry cooks, bake or fry potatoes until crispy. Warm garlic naan in oven. Serve curry over fries with naan and garnish with cilantro.
