For the Crust:
- 2 lbs beef chuck, cut into chunks
- 4 large potatoes, peeled and cut into fries
- 4 pieces garlic naan
- 2 large onions, thinly sliced
- 3 tbsp curry powder
- 1 can coconut milk
- 2 tbsp vegetable oil
- 4 cloves garlic, minced
- 1 tbsp ginger, grated
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
1. Prepare the Crust:
- Season beef with salt, pepper, and curry powder. In a large pot, brown beef in oil over medium-high heat.
- Add garlic and ginger, cook for 1 minute. Pour in coconut milk and simmer on low for 2 hours until beef is tender.
- Meanwhile, fry potatoes in oil until golden and crisp. Sauté onions in a pan until caramelized. Warm naan in oven.
- Serve curry topped with caramelized onions, alongside fries and naan. Garnish with cilantro.
